The Garland XPE36 XPress commercial clam shell griddle’s ³/₄-inch carbon steel bottom plate has heating and recovery superior to thicker plates, though it doesn’t retain heat as well. Using top and bottom plates, the unit optimizes cook time by grilling food products on both sides at a time. The top plates are raised and lowered automatically by a low-noise lift system. Programmable controls and a USB interface equip the Garland XPE36 press griddle to provide various functions, from independent cooking zones to menu updates. Side-mounted grease pans collect food juice and other residue from the griddle plate, and splash guards channel residue into the pans. For resilience and dent resistance, the griddle uses extensive stainless steel in its construction.
