To change the speed and slice thickness, the Univex 8713S Premium automatic slicer has variable controls. It can cut as thick as 0.875 inch, and the speed is adjustable from 21 to 47 strokes per minute. This slicer has two modes of operation-automatic and manual-and a sharp, 13-inch-diameter blade that can be honed with an integrated sharpener.

This Univex 8713S variable speed slicer can accommodate 9-inch-diameter round product, 6.5-inch by 6.5-inch square product, and 10-inch by 6.5-inch rectangular product. Because the motor is gear driven, the slicer withstands medium- to heavy-duty applications, and it can be used for 8 hours a day with an unlimited amount of cheese. These gears transfer power from the motors to the blade, and they are more durable and reliable than units with a belt-driven motor.
