High-density insulation and a double-walled, welded construction retain heat, and its interior and exterior are made of stainless steel-a durable material that resists rusting and facilitates cleaning. Accessing the warmed plates is convenient because of the door’s flip-up design. Made of aluminum, the door is blue powder-coated and has a built-in menu card holder.

Mounted in the top of this Carter-Hoffmann HP58 heated plate holder, its convection heating system uses fans to disperse heat, and this design ensures the temperature throughout the unit is even. Temperatures can be set on a level between 120 and 185 degrees Fahrenheit, but it is factory set at 155 degrees Fahrenheit. Minimizing oil buildup, the dishwasher-safe grease filter protects the components and prevents system failures.
